Hey. Hi. Hello. Today I thought it would be fun to share one of my favorite recipe’s with you, Dark Chocolate Cookies! They are so simple yet, incredibly good! My friend made them a few months ago for a church group meeting and they were so good she gave me the recipe and I absolutely love them! Also, they are super versatile, you can melt a peanut butter cup or an Andes mint in the center of two when they are fresh out of the oven. (please, I beg you to try at least one like this)
Start out by mixing together your dry ingredients with a whisk.
Beat the butter and sugars together.
And add the eggs.
Mix the dry ingredients into the wet ingredients.
Form the dough into rough balls** and bake.
And enjoy!
Now is the perfect time to stack two together with a peanut butter cup or Andes mint or butterfinger or anything else you fancy!

And now what you have all been waiting for, the recipe itself!!
(make sure to read through all the recipe notes before beginning)
Dark Chocolate Chip Cookies
Makes about 2 dozen.
Ingredients:
2 cups all-purpose flour
2/3 cup dark, Hersey’s baking cocoa *See note at bottom
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
2/3 cup granulated sugar
2/3 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 2/3 cups chocolate chips **See note at bottom
Directions:
- Preheat the oven to 325*F and line 2 cookie sheets with parchment paper.
- Whisk together the dry ingredients in a small bowl.
- Beat the butter for about a minute then add the sugars and beat for 1-3 minutes or until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix together with a spatula.
- Add the chocolate chips.
- Scoop the cookie dough into tablespoon size balls and place on cookie sheet. ***See note at bottom.
- Bake for 11-13 minutes. After baking let the cookies set on cookie sheet for 3 minutes before transferring to wire cooling wrack.

Recipe Notes:
*Here is a picture of the cocoa powder I used. You can use the regular kind, they just won’t look as dark.
**You can pretty much use any type of chocolate chips you want, for the example above I used semisweet, but white would give a neat pop and peanut butter may be interesting, while dark chocolate would stick to the theme!
***I scoop my cookies rather than rolling them for a more “rustic” look, which I like. If you don’t like this then feel free to roll your cookies into balls before baking!
